We made it through the week

This last week was a tough one for my son and I. He started class this week and it was a rough week to say the least. Monday I had to take him to his Photo class at 6 pm but hubby was later getting home with the car so we were a few minutes late. Hubby had to cook for himself that night. Tuesday we had to leave at 5:30 am to get hubby to work, then we went to the restaurant next to his work and had coffee for about 3 hours. When I got in the car I found that there was not enough gas or us to get home so we had to stay in town the whole day with nothing. Nothing being no food or money. I did have a bottle of water in the car. Well to say the least we did make it with a lot of walking around Walmart and other store that we could walk to from where the car was parked. One of the teachers were nice and gave us both a 4 pack of cheese crackers and I did have about $1.00 in the car so we were able to get some fruit gummies. All and all we made it that day. Wednesday we got to stay home and rest. We made some muffins to have Thursday since we more or less had to do the same think again. Tuesday night hubby siphoned some gas out of his truck that is broke down right now. Thursday was much better for us for we had some food and something to drink and the day went faster.

Next week is going to be even rougher since I have to take hubby to work Monday at 5:30, then take my son to the doctors up north at 10:30, then to the South to get a book for one of his classes, see family and take care of some stuff that way. Then back to my husbands work  take my son to photo class and home around 9:30.  Tuesday and Thursday we have to stay in town again, just to help save on gas.
Just think I am doing more in these two weeks than I have in the last two months.
The dog are not going to like this at all.
Since the next two week are going to be a bit rough we have two weeks of meals planned and are doing what we can over the weekend to stream line cooking times and that. I only have weekends Mondays(most of the time) Wednesday and Friday to do any real cooking. Money we have to cook early for class is at 6, Tuesday and Thursday we cook something kinda fast when we get home or I do it the day before. I can make some of what we eat the day before., We are going to have to have some freezer pleaser  that are fast and easy to throw in the microwave for these night before to long.
Just think Next semester might even be worse since I am thinking of going to classes too and at that time we are going to have to go to the main campus which is an hours drive times 2, not the one that is closes to us.
We can only wait and see what happens.

Nice weather and stockpiling ahead

The weather is just way to nice for the middle of August, and with that and some of the weather folklore I have looked at we are in for a bad winter. The corn here has thick tight husk. It is a cool August following a warmer that normal July. We have had 3 or 4 foggy day already this month. I mean come on it is August and I have the AC turned OFF, the window open and the attic fan on.
With all that I am going to be working on a good stock pile of food for the winter just in case. Living out as far as we do it is best to be ready for the worst, and hope for the best. I would like to have about 4 to 6 weeks worth of food on hand. I don't wand to have a lot in the freezer since we could lose the electric to an ice storm or something. Been there done that. Everything is going to have to be canned or dried. I hope that I can get a dehydrator very soon, but we are going to have to get the truck fixed first. We can only wait and see what happen.
Now on to recipes and meal planning, that I am not all that good at. I have a habit changing up recipes just about every time I make them. Like last night I made Chili and I just browned some ground beef added about 8 cans of stuff and chili season and that was it. 8 cans are tomato sauce, paste and soup, caned green chilies chili beans and kidney beans, crushed and diced tomatoes heat to a simmer and done. tonight we are having smoothed Pork Steaks put steaks in a glass baking dish, cover with a can of cream soup, Mushroom, celery or what every you think will taste good. Bake for about 1 hour at 350 degrees.
Tomorrow I am going to be traveling a lot with taking my hubby to the hospital for a bunch of test, most of them are routine. so tonight I will make some breakfast sandwiches to take with us. I am going to bake the eggs in my large muffin tin so they are round. Any left overs that I have I can freeze for the weekend. Everyone know I have more eggs than I really know what to do with. I hope to get a angel food cake pan soon so I can start to make them. Well till later.

Rain and flooding

Well it happen, the chickens coop is flooded, along with my husbands shop. We has up to 6 inches of rain last night and most of it was in a very short time frame. I poor chickens are going to have to deal with there coop till over the weekend. I hate to have to do that to them, but we are to have tons more rain over the next few days. I will wait till my husband is home to help make it a bit water tight. There was no way we were not going to be water in there it went right under the roll up doors. The water even got into my garage where I have Thelma and the 5 little ones. I am not sure how much more rain is going to fall but the ground around here just can not hold anymore.
In ways this is a good thing but then again it is a bad thing too. We really needed the rain just not this much all at once. Don't get me wrong I love the house but having a hill behind it is a pain with this much rain. No water came into the house for the house is up off the ground enough so that will not happen, but he garages and that are a different story.
We still have not got the grass all mowed for it keeps raining over the weekends. Now what we did get done that one weekend is up to about as tall as the rest. Seen when it comes to getting outside stuff done we can not win for losing. I still have to get the garden boxes ready for next year but at this time can not get to the area where I would like to put them, the grass. We maybe some day.
