A faster way to make biscuits and a trick for the perfect gravy

Twice I have made biscuits in my Kitchen aid mixer and both time they have came out just great. I use Self-rising flour, 1 stick of butter(1/2 cup), 2 teaspoons sugar(sometime I add extra for a dessert biscuit) and 1 cup milk. Since my Self Rising flour is a bit old I use 2 teaspoons baking powder to the mix. I mix the flour, baking powder and butter(cold) on stir for a bit then add the milk in a steady stream, when the mix is combined some i turn the mixer to 2 and mix for about 30 second. I then turn it out on a floured surface and kneed for a bit to combine it all together, at this time I might add a tablespoon of milk or two. DO NOT kneed for to long. Roll out and cut in to biscuits. bake at 400 for about 10 to 15 minutes.
Now for the gravy I learned this trick for Trisha Yearwood's cooking show. 442 is the secret for perfect gravy. 4 tablespoons flour, 4 tablespoons butter, grease,or drippings and 2 cups milk. make a rue with the butter and flour and cook for about 5 minutes to get rid of the flour taste, stir in the milk and stir till nice and thick.

Yesterday I have to format my computer and redo a bunch on it. Something had gotten on to it and we just had to get it fixed, plus I really mucked up all my music folders so we could no longer play the music through my sons Play station. Well I am about 1/4 of the way back to having everything back on the computer. It seem that my husband likes to download stuff that we really don't need for places that I would never think of going to. We all know men will be men. So now I am looking  on how to block all the downloads so that they will only be able to be done by me or my son.
You see my son is the one that has keep my computers going over the last 15 years. He learned most of what he knows about computer by just doing it. I really have to say if it was not for him and his way with computer I most likely would not have a computer running all the time. Most of the work he did way back when was on a computer back 15 or so years ago that spent more time in the shop under the warranty than at home. Well to say the least after the warranty was up it crashed again and low and behold my son fixed the way it should have been fixed a 1 1/2 before. Never had any trouble after that, beside the computer being a bit bisexual. Yes you read that right. One day she would work for me the next the boys but not to often for both in the same day. If not for my son Frankensteining  my computer I would not be able to play some of the game I do. had to get a new video card my power supply would not support.(The video card was on sale). My son bought a new power supply for my computer and had to put it on the outside for it did not fit either(darn mini towers) So needless to say my son is great with computer.
The chickens are doing good having to be locked up all the time. I only have 10 in there with mom and 5 babies over night. I am working on getting the babies to stay in the coop\run but they still keep getting out. I have a crate that I put in the shop for them to all go in at night and I then put it in the coop, next morning I let mamma out to be with the babies and do it all again. One morning they will no longer be able to get out and the madness will stop.
The deer got to one of the jalapeno plants and eat most all of it, The tomato plant is getting hit with horn worms and the grass is still getting taller than me. The mower is on the way to being fixed, and the rest I am about to give up on. Things never go according to plan, we all know this.

The Master List and shopping

I have been working on making a master shopping list and master list of items to keep on hand. Being that I cook most everything form scratch there are a lot of items to keep on hand. I found out over the last week I had some spices in my spice rack that where from 06, well they went in the trash. Going to have to find a replacement for Cream of Tartar, just don't use it enough to keep it on hand. My master shopping list can be found here. This list is also the list I use to keep the pantry stocked.
This is how I plan my shopping trip every two weeks.My son and I look at the ads for the three stores that we will shop at,  they come out on Wednesday. One of them is on the way home for my husband so he just stops and gets the items on sale there one night if there is anything there that we use. Being that we are not in a major city all we have are mom and pop type stores for the most part. I do not shop at Walmart. They do not save you move with there ad comp if you have to drive farther to get to them. The three big ones that we go to are Harps(this is on the way home for hubby), Harter House( best meat we have found in the are besides growing your own) and Country Mart( just close by). Once about every 6 months or so we will try and make the 1 hour trip to Aldi's to do a major can stock up. We do not use any canned vegetables at all, they are to mushy to us. Most of the canned goods we use are tomato, beans and soups. I take up to three days going over the ads and making my list. I then make a menu of what to make for the two weeks with what is on sale. MY son helps with this for he cooks too. He found this site this last week. I might start to use it a bit. being that summer is here we might try to use the slow cooker more.I am going t hve to get more of them for one might not be enough. Everything that I use can be found here. It does take me the three days to get this all done for I have a lot to look at. I use all the ads on line at the store websites. I do not work on it all the time but off and on for the three days. If I worked on it all at one time I would not see everything in the ads.
I am going to see if I can get my menus over here to the blog but it may take me a few weeks to learn how to do this, for I am still learning how to use Ziplist. I hope that someone out there might find this helpful. I would love to here form you if you have any think that might help me with my plans.

What a time we have had

Well after a not so nice medication oops with my son we have spent the last 48 hours doing a lot of cleaning and redoing of cabinets. For the first 12 to 18 hours my son sleep up to 20 hours after taking a new med that the doc gave him. He looked like he had a hangover and said he felt like it too. After that we had the fight that has been waiting to happen for the last 6 months, and now the house is clean the laundry is about done and my cabinets are looking like the day I moved in just about.
I have turned off the Dish network for a time and hope that we can get everything up to date and all that. I really need to restock the cabinets and that before to long. I hope that I will be able to have at least 6 to 12 cans of each item in my cabinet on hand. Some of the stuff that I keep in my cabinet is the following.
Tomato sauce
diced tomatoes, different kinds like with onion and garlic and stuff like that.
tomato paste
crushed tomatoes
tomatoes with green chili
green chilies
mushrooms
canned beans, like pinto, black, kidney, and chili
cream soups: mushroom, celery, chicken, chedder cheese
hot dog chili, we use this for chili cheese tater tots  or chili dogs
extra bottles of mustard, ketchup , miracle whip, soy sauce, Worcestershire sauce, and vinegars
pasta of all kinds.

for baking I try to keep the following:
Flours: AP, wheat, rye, bread
cornmeal and corn flour(masa)
sugars: white, brown, and powder
different type of chips: chocolate, peanut butter, butterscotch, and some for different holiday ones. these I keep int he freezer
baking soda
baking powder
cornstarch
shorting and oil
I use butter for baking and margarine for eating still have to try and watch the cholesterol

and for spices I have a lot.
I still hope to someday have dry foods on hand, so that I don't have to use as much room in the freezer. That is going ot be some time down the road now.
