More new eggs and homemade tamales

The girls are still give up new eggs. Most of the time we are getting around 18 or so. We are making a Egg for sale sign to put at the end of the drive way this week. I will take a picture when it is done. I have about 8 dozen in the frig and another dozen or two on the counter and for the family. Yesterday we had to dispatch one of the roosters for he was causing way to much trouble. I had had him locked up all day to be butchered  out but we did not get to it so we let him out. Not 20 minutes later he was attack Copper one of my best roosters again. I marched my happy ass back into the house grabbed my .22 and three bullets( there was no way we were going to catch him) gave them to my husband and told have at it. I can say that my husband can shoot the eye of a rooster at 10 feet. My son and I dressed him out. We have found that it is much easier to pluck out the feathers right after they are killed and you don't get the wet feather smell. We just cut the wings off if we can not get all the feathers out fast enough, for there is not much meat there.
Today my son and I made homemade tamales and it was not that hard at all. He uses a Guajillo pepper that is very mild heat wise. We use the chilies mixes with some hot water to make our rice too. I think we are going to start making tamales when roast go on sale for we get quite a few out of one good size roast. I think we might make some chicken one later this week to put in the freezer since I have two chickens that we need to use up.
I would like to start getting the freeze stocked up with food along with canned good and dried foods on the shelves. Being that we live so far out it is not easy to get to town like a lot of people can. I need to have a small store in my house to not have to go to the store as much. We are going to have to go slow at it for more money coming in would be very nice, and to do that my son and I have to go find jobs alone with running the homestead. That is ok for right now we just have the chickens and if we can save up the money we will get our rabbits and a goat or two later this year.
As for lowering our cholesterol that has be a bit harder this last week or so. We really try to watch what we are eating in the morning and afternoon so that we don't have to watch so much at dinner time. We really have to get some of the VTP to start using to help cut the cholesterol down even more. Again that is going to have to wait till more money is coming in to the household.

New eggs and More

Well some of the new girls are starting and one of them are laying blue eggs. That now gives me two green/blue eggs for now. Some of the new girls have taken to laying under the house, the good thing is it is a easy location to get to, It is just remembering to go look there everyday. We are now getting about a dozen eggs a day. I should have three more in the clutch that is out in the grow out brooder, that we build yesterday. We build it by taking a piece of fence and making a semi-circle up against a wall. It works for chicks that are 4 weeks or older. I don't mind to much having chicks in the house but the dust gets to be a pain. In the Spring I will keep all the chicks in my garage. I got my husband to put the hinges on the coop door so that it will not fall on me or the chickens.
I am hoping that we will be able to start getting some for the rabbits or goats soon. We got the fence done so that we can have a goat or two.
As for the low cholesterol diet we are still working on it and doing good at it. We did have a slip up week this last week. I would like to be able to start using some texture protein to help lower our intake of cholesterol even more. We found some that we would like to get but having the money to get it is another thing. We have had to go on a very tight budget for this year. With getting the new house and having to buy a new lawn mower this year. There is some things that are just going to have to wait.

Low Cholesterol might mean lose weight

With the diet that my son and I are on we might just start to lose some weight. He don't really need to lose weight but I sure the heck do. My son did a lot of research on lowering your Cholesterol and found that adding a lot more fiber to the diet will help lower the cholesterol. Well to add fiber to our diet we are just about going vegan but really we are not, we are just really cutting back on all animal product that we take in.
For breakfast we eat oatmeal or cream of wheat 6 days a week the 7th day we have 1 egg and a breakfast meat such as a Bacon, egg and cheese biscuit like we did this last Saturday. For lunch we try to have a salad or a veggie dish(leftovers at times).We do not eat Ice Burg lettuce for it really has no nutritional value. We eat Spring greens and Spinach, add green onions and I use a nice topper that is crunch since I can not use bacon bits and meats.   For dinner we have our one meat for the day since there is no way on this earth I am going to get my husband to not eat meat and potatoes. We watch how much meat we take in by weighing out our portions. We strive to stay very close to the 3 ounce mark.
We do raise our own chicken and soon we are going to start having rabbit. Now I know some of you don't think of rabbit as a food but I was raised eating rabbit that we raised. This is a leaner meat that pork and beef. Fish is another food that we will start eating more of, Once we start to go fishing
Each week I think we are going to try a vegan product and see if we can use it to help in our fight to lower the Cholesterol and keep it down. This week it is a cheese for having grill cheese sandwiches or a breakfast sandwich on the weekends. I found a recipe for a tofu bacon sub that we are going to try at some point.
The goal is to lower our Cholesterol and lose weight a week at a time so each week that we succeed is another week that the goal is met.

New Year, New Things

Well, this year I will be going back to college, for what I am not really sure. For right now I am taking some classes for plants and animal to help better understand what I want to do on my homestead. I hope that I can learn stuff that will help me.We(as in me and my son) are now on a low cholesterol diet and that means a lot of changing of what and how we eat. We got started a bit early by starting yesterday.
This is going to be the first year that we really get stuff going on the homestead for I have help beside my husband this year. We have a garden to plan and get planted, animals to work on getting and the only money that we are going to have is the money that I get for my chicken eggs sales and the sale of baby chicks alone with what my son can put in to it. I would like to be able to get a goat and a trio of rabbits for better meat choices for us to eat that are healthier.
We are also going to be starting a better cleaning idea for the house,well it is one I have had for a time but now that my husband told me NO computer for us till chores are done it is get it done or no computer. The chore list is not that long for everyday so in less than an hour we should be able to get all the chores done and be on the computer doing games and homework.
Sadie or oldest dog had to go to the vet yesterday and they found that she had a tick disease, so now she is on some meds for 30 days. We were thinking that she had arthritis since she is 9 years old but as of now it is not.
